The Mantissa farm always starts with a rigorous selection of the coffee seeds. The selected seeds are planted and retained in special nurseries where the seedlings sprout. Once they sprout between 4 - 6 leaves they are transported to the soils where the crops will be kept.
Mantissa is located in a region that produces arabica coffee of particularly high quality. The area comprises 208 hectares, of which 160 are coffee crops producing mostly Yellow Bourbon, Red Catuai, Yellow Catuai, Mundo Novo, Obat, Arara and Icatu varieties. The average production per year is about 8,000 sacks.
Coffee harvesting in this area is rigorously carried out by well trained labor in scheduled periods when the sugars are already developed. The farm performs manual and mechanic harvesting. Mantissa performs different post harvesting processes in order to meet the most stringent customer demands as well as market needs. Natual and fermented are some of the farm's main processes. After the coffees are harvested and sorted, they rest under the sun on conventional yards and/or suspended yards laid out for ideal air circulation in every direction as well as greater utilization of solar radiation, resting until the reach 11% humidity. Once complete, they remain in clean, well ventilated storage according with all certification restritions. Additionally, they are preserved in high barrier packages to preserve the unique quality and sensorial characteristics.
