Fazenda de Salto sits in Carmo de Cachoeira in the Sul de Minas at 1,230 meters elevation, which is one of the higher elevation farms in the region, which is demonstrated in the high quality of the cup. This lot was processed as a 72 hour anaerobic, giving an extended fermentation window for greater complexity and depth. This coffee has a natural sweetness that is balanced well with good body and complexity.
