Fazenda de Salto sits in Carmo de Cachoeira in the Sul de Minas at 1,230 meters elevation, which is one of the higher elevation farms in the region, which is demonstrated in the high quality of the cup. Otavio Reis and his family manage the farm with an intentional balance of innovation and sustainability. The Reis family take their call to steward the land well with great gravity. This is shown in the conservation areas that far exceed legal requirements, utilization of renewable energy, CO2 neutralization, and protection of the natural springs. Considering the exceeding quality of this coffee in conjunction with the Reis family farming practices, this coffee excels in every way.
This lot was processed as a 72 hour anaerobic, giving an extended fermentation window for greater complexity and depth. This coffee has a natural sweetness that is balanced well with good body and complexity.
Salto is Rainforest Alliance and Fair Trade Certified.
